How to make sugar free, keto friendly, cake pops for a festive, fun and delicious treat

Make delicious, sugar free, cake pops that are keto friendly. This recipe is simple and easy and can be made in under 30 minutes (with some extra time for cooling and setting).
I am going to share recipes for BOTH KETO Chocolate and KETO Vanilla SUGAR FREE Cake Pops.
SHORTCUT ALERT: The fastest and easiest way to make these keto cake pops is to use a bundle that includes one chocolate cake mix and one vanilla or yellow one.

KETO Chocolate SUGAR FREE Cake Pops
Makes about 24-30 cake pops, depending on the size

1 package Pillsbury Sugar Free Chocolate Cake Mix OR Swerve Chocolate Cake Mix
3 large eggs, beaten
3-4 Tablespoons melted butter
⅓ cup water
⅓ cup oil - I like to use VEGETABLE oil, GRAPESEED oil, or AVOCADO oil
1 tsp vanilla
KETO Chocolate Coating
3 tbsp melted butter
6 oz sugar free dark chocolate chips, or chopped chocolate. I HIGHLY Recommend Lily's, as it tends to melt beautifully.
Sprinkles as desired (keep in mind this will add sugar to the mix!) You can opt for SUGAR FREE SPRINKLES, like these ones from Nativo, that you can order through Amazon:
Directions
Make the cake according to the package directions (that will typically require the eggs, oil, water and vanilla), and let cool completely.
Break up the cake into a large bowl. Because of this step, you do not have to worry about making a uniform cake, or even a cake that looks good; just get it done!
Add the melted butter and stir to combine well. Take about 2 or 3 tablespoons of the mixture and squeeze together, then roll into balls. If the mixture won’t hold together, add a tablespoon or two of water to the bowl and mix in.
Place the balls on parchment paper (I like to place this on a baking sheet for easy transferring!) and freeze for about one hour.
KETO Chocolate Coating
Place the chocolate and butter in a glass or ceramic bowl set over a pan of simmering water. Stir until melted and smooth.
To make the pops, dip a lollipop stick in the melted chocolate and then press it into one of the cake balls, then dip the cake ball into the chocolate.
Push the end of the stick into a piece of cardboard or Styrofoam so it stands upright.
Sprinkle with sprinkles if desired (I really like to use SUGAR FREE Sprinkles) before the chocolate coating hardens.
Repeat with the remaining cake balls and lollipop sticks.
