Creamy Instant Pot Mushroom Chicken with Broccoli

An Easy and Budget Friendly Recipe you can make in 30 minutes or less

 




An easy and delicious family dinner, this creamy mushroom chicken with broccoli is a nutritious and cheap meal to prepare. A family favorite that even kids love!


Does it matter which pressure cooker I use?


The short answer is yes and no. If you are following this recipe, you will want to use an Instant Pot, as that is the cooking time that has been tested for these ingredients. If you are opting to use a different brand of pressure cooker, ensure that you check the required cooking time for both frozen and thawed variations of chicken.

Making recipes at home is a great way to get the rich restaurant flavor without spending a ton of money.


Creamy Instant Pot Mushroom Chicken with Broccoli

Serves 4-6



Ingredients


  • 3 chicken breasts (frozen or fresh)

  • Salt and pepper to taste

  • 1 clove of garlic; crushed or chopped finely

  • 2 cups mushrooms; sliced

  • 1 tbsp of basil

  • 2 tbsp olive oil

  • 1 cup Chicken broth

  • 1/2 cup milk or cream

  • 1/4 cup Cornstarch, dissolved in ¼ cup of water

  • 2 cups of fresh broccoli, chopped




Instructions



Preheat Instant Pot on Saute More mode. Add olive oil to the pot. Add mushrooms and sautee them until they are golden;




Add chicken on top of the mushrooms, season with salt and pepper;


Add broth to the Instant Pot. Close the lid and change setting to Manual Pressure High for 12 minutes. Ensure the vent is set to “Sealing”. If the Chicken is frozen, adjust cooking time to 18 minutes;

After the cook time has completed, vent to release pressure, be careful, stay away from the hot steam. Remove chicken from the pot, shred, and place it in a serving bowl. To the pot, add milk, and cornstarch and water;


Sautee and as soon as the sauce starts to bubble, add the broccoli;




Simmer for about 5 minutes or until the broccoli is cooked through;

Add the chicken back into the sauce mixture and stir in 3 cups of cooked pasta of your choice for a fast, delicious, budget friendly meal that the whole family can enjoy.
